Ingredients:

2 cups sugar
1/4 cup plus 2 tbsp water
2 tbsp light corn syrup
1 cup heavy cream
10 tbsp unsalted butter
1 1/4 tsp sea salt
Directions:
  1. Put sugar, water, and corn syrup in a heavy bottomed medium sauce pan. Stir to combine.

  2. Heat over medium heat with out stirring until the caramel turns a deep amber color. Brush the sides of the pan with a pastry brush dipped in cold water to remove spatters.

  3. Lower the heat and carefully add the cream and butter.

  4. Stir continuously over low heat until mixture has smoothed out.

  5. Remove from heat and stir in the sea salt.

  6. Pour caramel into a heatproof container to cool until just warm before using. Store remainder in the refrigerator, warm in the microwave before use.
